Potato salad with minced meat skewers
Spicy minced meat skewers and potato salad macerated in broth with apple cider vinegar and sunflower oil are a winning combination!
Ingredients
Main course For 4 people
1 kg of cooking resistant potatoes
salt
1 teaspoon of caraway
1 liter of vegetable broth
1 tablespoon of mustard
salt
pepper
4 tablespoons of apple cider vinegar
6 tablespoons of sunflower oil
1 bunch of radishes
1 bunch of chives
¼ of a bunch of parsley
Skewers of minced meat
1 small onion
300 g of ground beef
1 yolk
salt
Cayenne pepper
cinnamon
¼ teaspoon of ground cumin or crushed cumin seeds
sunflower oil for cooking
How to proceed

Boil the potatoes in salted water with the caraway for approx. 30 minutes. Bring the broth to a boil and mix it with the mustard, salt, pepper and vinegar. Pour the oil slowly. Drain the potatoes and peel them while still hot. Slice them and add them to the hot sauce. Mix well and allow to cool to room temperature for approx. 1 hour.
For the skewers, chop the onion. Mix it with the minced meat and the yolk. Knead the mass until it becomes homogeneous. Season with salt, cayenne pepper, cinnamon and cumin. Shape into small sausages with a spoonful of dough and skewer them on wooden skewers. Brown them in oil over medium heat for approx. 8 minutes, turning them from time to time. Cut the radishes into thin slices. Chop the herbs and add them to the salad together with the radishes. Serve the potato salad with the skewers. Serve with a yogurt and cucumber sauce.
